It's finally the Year of the Rabbit. After the previous night's indulgence, we usually have something lighter on the 1st day of the Chinese New Year.
My mom cooked a type of vegetarian dish comprised of chinese cabbage, fried taopok (beancurd), mushrooms and fried onions. It's a slightly sweet and savoury dish which goes well with white rice. We usually have it at home during normal days too.
For the 1st day of the new year, we usually have noodles with this dish. The noodles are cooked in boiling water and mixed with some oil and fried onions to flavour it.
According to my mom, my late grandmother would cook this for the 1st day of CNY. I was probably too young to remember it. Certainly a very delicious start to the new year!
